Tempeh Tostadas - Vegan

This recipe is so good that my meat eating husband actually likes it better than regular tostadas with meat. How about that!

What goes into your body (4 vegan servings):
  • 8oz Tempeh
  • 2 tbsp tamari (or soy sauce)
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • Tabasco sauce, to taste
  • 8 whole grain tortillas
  • 2 tsp olive oil
  • 1/2 cup finely chopped onion
You are going to... :
  1. Steam tempeh for 20 minutes, let it cool a little bit and crumble with a fork

  2. Combine tempeh, tamari, chili powder, garlic powder, cumin, oregano and Tabasco sauce. Toss until thoroughly combined.
  3. Heat oil in the skillet. When hot, add onion and saute until tender. Add tempeh mix to skillet and saute until lightly browned, about 4-6 minutes.

  4. Warm tortillas 5-10 seconds in microwave.
  5. Spoon the tempeh mixture onto each tortillas and add your favorite toppings.
Secrets from the chef:
  • Suggested toppings are shredded lettuce, chopped tomatoes, diced avocados, salsa, minced fresh cilantro, black olives, scallions, finely chopped red onion, etc.

  • For our non-vegan dinner guests, we can offer cheese and sour cream for topping option.
  • This is a great recipe when entertaining non-vegan friends. I cook up some ground beef in Taco seasonings as well. My guests are usually impressed with how tasty this vegan recipe is.
  • For lighter meal, you can make it into a Taco salad with chips on the side.

Bon appétit!

  2. Looks great! I also have not cooked with Tempeh but will give this a try sometime.

I wanted to suggest a recipe... I made a pizza this week using hummus for the sauce instead of marinara and it was great. You wouldn't need cheese with this. I put spinach, tomato, garlic, onion, and zucchini on it.
