What goes in your body (vegan):
- 2 cups black beans, drained
- 2 cups corn, drained
- 6 tbsp fresh lime juice
- 5 tbsp extra virgin olive oil
- 1/4 cup red onion, minced
- 1/4 cup scallions, minced
- 1/4 cilantro, minced
- 2 tsp cumin
- salt & pepper
- 1/2 cup fresh tomatoes, chopped
- Mix all ingredients, except the tomatoes, together.
- Add salt and pepper to taste. Cover and chill.
- Shortly before serving, toss in the tomatoes.
Secrets from the chef:
- This salad can be prepared the night before. The flavor get blended better as you leave it in the refrigerator over night. Don't forget to toss in the tomatoes just shortly before serving.
- You can turn it into a satisfying, healthy, main dish by adding some cooked small pasta such as orzo or couscous, or whole grain such as quinoa or wild rice.
